Glad to hear I wasn’t accidentally slipped some wheat dough. If I remember right, there was a bit of a grainy texture to the dough that also made me think it was wheat, but that could have just been my eyes playing tricks on my mouth. Damn the eyes!

I can tell from the picture that your calzone was made on white dough. The brown tint to the outside is from cooking it in an oven (that’s why a loaf of white bread has brown crusts). Similarly, the fluffiness of the dough is a trait found in the white dough, as the white flour adds a bit more elasticity. But we appreciate the feedback.
